Sesame Noodles
Ingredients
8 ounces dried soba noodles
Cooking Instructions
Bring a medium pot of salted water to a boil.
Add the soba noodles and cook, stirring frequently, for 1 to 2 minutes or according to the directions on the package.
Drain the noodles, rinse lightly with cold water, and set aside.
Combine the soy sauce, rice wine vinegar, sesame oil, tahini or peanut butter, brown sugar, garlic, ginger, and hot chili paste to taste in a bowl.
Whisk together until smooth.
Pour the sauce over the noodles and toss to coat evenly.
Serve the noodles at room temperature, garnished with the chopped scallions.
