Hi everybody. I hope you all had a great thanksgiving! Mine was lots of fun. Here’s the breakdown of what we ate:
Turkey with Gravy
Stuffing - my mom made two batches so we all got to take home leftovers
Mashed Potatoes with Robert’s red chili - a big hit
Baked Butternut Squash with Honey-Mustard Glaze
Oven-Roasted Vegetables with Rosemary - always good, with shiitakes and fresh fennel
Brussels Sprouts
Cranberry Sauce
Green Salad with Roasted Cauliflower and Radicchio - this was very good
Two pies from Katie - sweet potato pie and the world’s best pumpkin pie (which I just sampled for breakfast)
Everything was very good and I ate just the right amount to not be overly-stuffed. I can’t wait to eat the leftovers today. Other events from Thanksgiving include felting my first hat which turned out very cool and losing at poker to my brother-in-law. Oh well, maybe I’ll win at Christmas. Talk to you all later!

Last night I let Robert have the night off from cooking because he’s been working really hard lately. I used his leftover red chili sauce to make huevos rancheros. It was really good. I cooked up some black beans with onion, garlic, cumin, and oregano. Then I heated up flour tortillas, topped them with the black beans, fried eggs, a touch of cheese and the red chili sauce. Then, I made a fresh pico de gallo to serve on the side. Yum. This is a fast dinner that’s is really healthy too (as long as you don’t load it up with cheese, sour cream and guac, that is.) I may put a recipe up on elliemay.com but huevos rancheros is kind of one of those “use whatever is in your fridge at the time” type meals so it’s hard to write a definite recipe for it. Hello everyone. Last night I made vegetable pot pies from scratch for my post-election dinner (I was in need of some serious comfort food.) They were really good. I used potatoes, carrots, zucchini, corn, red bell pepper, spinach, and tarragon. I put chicken in Robert’s. The crust was a very rich cream-cheese pastry that was easy to make. It was a totally high-fat dinner but very much what I was looking for. I’ll be putting the recipe up on the website soon so look for it. Talk to you all later!
