I have only recently begun to experiment with seafood recipes; up until a few years ago, I was a strict vegetarian. I started incorporating seafood back in to my diet for a couple of reasons. One, it is very good for you. Also, I wanted to start eating less dairy so I needed some sort of protein alternative to fill that void. I knew that seafood was easy and quick to cook making it a great choice for weeknight meals. Finally, and perhaps most importantly, seafood just plain tastes good and I missed eating it. I am also lucky enough to live near the ocean so I have access to a great variety of seafood, and the local restaurants are always inspiring me to try new recipes. For any vegetarians who might have accidentally stumbled upon this page or were simply curious, have no fear! With a little creativity, many of these recipes are adaptable to vegetarian diets. The fish in the fish tacos could easily be replaced with tofu or simply left out with equally good results. Also, the masala sauce for masala shrimp is absolutely delicious over vegetables. Be creative and have fun making these wonderful seafood dishes!

Almond-Crusted Salmon
"In this easy dish, salmon is coated with a flavorful almond-herb crust and then seared. A delicate lemon-leek cream sauce finishes the dish. This is the perfect dinner for spring."

Calamaria Gemista
"Stuffed with a unique rice filling flavored with mint, currants and pine nuts and baked in a light tomato sauce, these stuffed squid (calamaria Gemista) are not to be missed. Serve with grilled vegetables and olive bread and nice chilled bottle of Greek wine."

Chinese Black Bean Salmon
"Fresh salmon is seasoned with aromatic spices and then quickly seared in this Chinese-inspired dish. A zesty vinaigrette of ginger, lime, sesame, soy and Chinese fermented black beans completes the dish. Truly amazing!"

Coconut-Red Chili Mussels
"Nothing can compare to fresh mussels cooked in this rich, velvety sauce made from red chilies, sweet bell pepper, and coconut milk. An incredibly spectacular treat!"

Fish Tacos
"My southwestern version of the ever popular fish taco features blackened salmon, black beans and corn served with a chipotle sour cream."

Ginger Fish
"This easy fish stir-fry calls for a shocking amount of ginger. But don't let that scare you off! Browning the ginger mellows it's flavor leaving behind only a pleasant spiciness."

Greek Halibut
"Greek Halibut is favorite in my family. With intense flavors of garlic, vinegar, and rosemary, this fried fish matches well with simple side dishes such as roasted potatoes and steamed green beans."

Grilled Tuna Fajitas
"These days, fajitas are no longer limited to just beef. This fajita recipe features thin slices of spicy grilled tuna and browned onions and peppers wrapped up in warm tortillas. A perfect match for homemade margaritas!"

Grilled Tuna Sandwiches
"In this dish, it's not just the tuna that meets the grill. The bread itself is grilled too! Herbed mayonnaise and greens dressed with balsamic vinegar perfectly complement the grilled tuna in this hearty sandwich."

Kulebiaka
"This is my take on the traditional Russian dish known as Kulebiaka. Creamy mushrooms, dill-scented rice, and salmon are all baked together in a flaky, puff pastry crust."

Masala Shrimp
"Serve these tasty shrimp over basmati rice. The rich and creamy sauce is great with vegetables or other types of seafood as well."

Salmon with Jalapeno-Lime Crema
"In this easy and tasty dish, fresh salmon fillets are baked in the oven with butter and lime zest, then topped with a luscious sauce of sour cream, roasted jalapenos, ground cumin and lime juice."

Shrimp & Shiitake Stir-Fry
"Dried shiitake mushrooms and Chinese fermented black beans are combined with garlic, hot chilies and oyster sauce in this flavorful sauce for stir-fried shrimp. Serve with plenty of freshly steamed white rice."

Steamed Clams with Garlic
"Garlic enthusiasts rejoice! White wine, crushed red pepper flakes, and, of course, garlic, combine to produce a spicy and delicious broth for fresh clams."

Tuna with Ginger-Cream Sauce
"In this Pan-Asian recipe, seared tuna is served with a cream sauce flavored with ginger, soy sauce, shiitake mushrooms, and lime juice. Not to be missed!"

Vietnamese Carmelized Shrimp
"Shrimp are cooked with traditional Vietnamese seasonings including fish sauce, scallions, garlic, and ginger in this light and unusual dish. A caramel sauce, added at the end of cooking, provides an unexpected sweetness that contrasts nicely with the other flavors."
