Soup has always been, and will always be, one of my all time favorite foods. Whether you prefer creamy potato leek, chunky minestrone or robust lentil, soups can always be counted on for a simple and satisfying lunch or dinner. I sometimes even enjoy them for breakfast! Soups are wonderful, not only because they can be made in a pinch out of practically anything in your kitchen, but also because they are incredibly forgiving to the novice chef. All you have to do is throw some olive oil, garlic or onion, soup stock, and a fresh vegetable or two into a big pot and simmer until done. This is the basic recipe for any good soup. From there, you can add any kind of enhancements you like, including cream or coconut milk, meat, beans, croutons, cheese, lemon juice, soy sauce...the list is endless. Because soups have such a broad range of attributes, from light or hearty, cold or hot, simple or complex, there is always a soup out there that matches your mood or desire. Experiment with soups on your own or try my recipes; either way, I guarantee that, once you start making soups, you will grow to love them as much as I do.
